Za'atar Chickpea and Tuna Salad

Ingredients

chickpeas rinsed
1 (15 oz) can
tuna oil-packed
1 (5 oz) can
English cucumber quartered lengthwise and thinly sliced
1 large
Kalamata olives pitted and coarsely chopped
1/2 cup
olive brine
1 tbsp
red onion quartered and thinly sliced
1 medium
fresh dill chopped
2 tbsp
za'atar ground
2 tsp
olive oil
1 tbsp
lemon juiced
1 small
crushed red pepper
1/2 tsp
salt fine sea
to taste
black pepper
to taste

Method

  1. 01In a large bowl, combine chickpeas, tuna, cucumber, olives, olive brine, red onion, dill, za'atar, olive oil, and lemon juice. Toss lightly and season with salt and pepper.
  2. 02Serve immediately on its own or with crackers, wraps, or grilled bread.
