Strawberry and Spinach Salad

Ingredients
- baby spinach
- 20 oz
- strawberries sliced
- 2 lb
- fresh basil torn
- 1/2 cup
- red onion thinly sliced
- 2/3 cup
- goat cheese crumbled
- 1 1/3 cup
- toasted pecans
- 2 cup
- extra virgin olive oil
- 1/2 cup
- balsamic vinegar
- 6 tbsp
- maple syrup
- 3 tbsp
- vanilla extract
- 1 tsp
- poppy seeds
- 4 tsp
- garlic minced
- 2 clove
- salt to taste
- to taste
- black pepper to taste

Method
- 01Whisk olive oil, balsamic, maple, vanilla, garlic, salt, and pepper. Stir in poppy seeds.
- 02Soak the onion in cold water 5 minutes to soften its bite, then drain.
- 03Combine spinach, strawberries, basil, onion, and half the pecans. Dress lightly and toss.
- 04Fold in most of the goat cheese. Top with the rest of the goat cheese and pecans.
