Mushroom Bacon Spaghetti

  1. 01Bring 2 quarts water to boil in large pot. Add spaghetti and 1/2 tbsp salt, stir occasionally, cook until al dente.
  2. 02Reserve 1 cup cooking water, drain pasta, return to pot.
  3. 03Cook bacon in 12-inch skillet over medium heat until golden and crispy, 6 to 8 minutes. Transfer to paper towel-lined plate.
  4. 04Add mushrooms to fat in skillet, cook over medium-high heat until softened and edges are golden, about 5 minutes.5 min
  5. 05Add scallion whites and garlic, cook until fragrant, about 30 seconds.
  6. 06Stir in 1/2 cup reserved cooking water, butter, soy sauce, and dashi powder.
  7. 07Transfer to pot with pasta along with bacon and toss to combine. Adjust consistency with additional cooking water as needed.
  8. 08Sprinkle with scallion greens and serve.
