Method
- 01Preheat oven to 450°F.
- 02Whisk eggs with milk, salt, pepper, garlic, paprika, and red pepper flakes.
- 03Sauté spinach and scallions in olive oil until spinach wilts, about 3 minutes. Add salt.
- 04Fold spinach mixture and sun-dried tomatoes into egg mixture.
