  1. 01Heat oven to 325°F.
  2. 02In a food processor, combine croutons, black pepper, cayenne, chilli powder, and thyme. Pulse until fine texture.
  3. 03Transfer crouton mixture to a large bowl.
  4. 04In the food processor, combine onion, carrot, garlic, and red bell pepper. Pulse until finely chopped but not pureed.
  5. 05Add vegetable mixture to the crouton mixture.
  6. 06Combine ground chuck, ground sirloin, and bread crumb mixture. Season with kosher salt.
  7. 07Add egg and combine thoroughly without squeezing the meat.
  8. 08Pack mixture into a 10-inch loaf pan to mold the shape of the meatloaf.
  9. 09Turn meatloaf out of pan onto center of a parchment paper-lined baking sheet.
  10. 10Insert a temperature probe at a 45 degree angle into the top of the meatloaf, avoiding the bottom of the tray. Set probe for 155°F.
  11. 11Combine ketchup, cumin, Worcestershire sauce, hot pepper sauce, and honey for the glaze.
