  1. 01Whisk soy sauce, rice vinegar, peanut oil, sesame oil, and monkfruit sweetener until combined.
  2. 02Tear romaine, wash, and dry in a salad spinner or with paper towels.
  3. 03Slice sugar-snap peas into short pieces, prepare matchstick carrots, and slice cucumber into thin strips.
  4. 04Toast sesame seeds in a dry pan for 1 to 2 minutes until fragrant, or use pre-toasted seeds.
  5. 05Toss romaine and baby greens with 2 to 3 tablespoons dressing to coat.
  6. 06Arrange dressed greens on plates or in bowls.
  7. 07Top each salad with sugar-snap peas, carrots, and cucumber. Drizzle with more dressing and sprinkle with sesame seeds.
