Ingredients
- chickencooked, cut into large chunks
- 6 cups
- avocadosdiced
- 4 medium
- lime juicefresh squeezed
- 6 tbsp
- salt
- to taste
- green onionthinly sliced
- 1/2 cup
- cilantrofinely chopped
- 1 cup
- mayo
- 6 tbsp
Method
- 01Dice avocados into medium pieces, place in small bowl, toss with 1 tbsp lime juice, season with salt.
- 02Slice green onion and chop cilantro.
- 03Whisk mayo with remaining 2 tbsp lime juice for dressing.
- 04Place chicken in large bowl, add green onion and dressing, toss until coated.
- 05Add avocado with any lime juice from bowl, gently combine.
- 06Add cilantro, gently mix until barely combined, season with salt.
- 07Serve immediately or chill before serving.
