Ingredients
- extra-firm tofu

- olive oil
- 6 tbsp
- saltto taste
- 6 tsp
- garlic powder
- 3 tsp
- arrowroot starch

Method
- 01Preheat oven to 400°F and line a large baking sheet with parchment paper.
- 02Drain tofu and cut in half lengthwise. Optional: wrap halves in a towel, place a cast-iron pan on top, and press for 10 minutes to remove excess moisture.10 min
- 03Cut tofu into 1-inch cubes and transfer to a bowl.
- 04Drizzle with oil and toss gently to coat.
- 05Sprinkle garlic powder and salt over tofu and stir to distribute.
- 06Sprinkle arrowroot starch over tofu and stir until powder is no longer visible.
- 07Spread tofu on prepared sheet in a single layer, ensuring cubes do not touch.
