  1. 01Heat olive oil in a large skillet over medium-high.
  2. 02Season chicken with salt and pepper. Sear 4 min per side until golden. Lift out.
  3. 03Lower heat, melt butter. Soften shallot, 2 min.
  4. 04Add garlic, sage, thyme, pepper flakes, 30 sec.
  5. 05Whisk in pumpkin and broth. Simmer 3 min.
  6. 06Add cream, parmesan, sun-dried tomatoes. Stir smooth.
  7. 07Fold in spinach until wilted.
  8. 08Return chicken, spoon sauce over. Simmer 4 min.
