  1. 01Bring split peas and 6 cups water to a boil. Do not add salt. Simmer 30-40 minutes until tender. Drain excess water.40 min
  2. 02Meanwhile prep and chop onion, celery, apple, and ginger.
  3. 03Saute onion, ginger, celery, and apple in coconut oil until softened, about 3 minutes. Add cooked drained split peas, curry powder, black pepper, cayenne, salt, and broth. Simmer 20 minutes. Turn heat off.23 min
  4. 04Add coconut milk, frozen peas, and cilantro. Blend until smooth with a blender, food processor, or immersion blender. If you prefer more texture, reserve 2 cups soup and blend the rest, then combine and gently reheat to serve.
  5. 05Adjust lemon juice and salt to taste.
  6. 06Garnish with fresh cilantro and a drizzle of coconut cream or yogurt.
